Chipotle Cashew Cheese

PREP TIME 10 minutes  |   TOTAL TIME 2 hours

​Ingredients

  • 1 cup of Cashews

  • 1/3 to 1/2  cups of Filtered Water (note closer to 1/2 cup makes it creamier)

  • tbsp Lemon Juice

  • 1 tsp Chipotle Pepper

  • 1 tsp Smoked Paprika

  • 1/2 tsp - 3/4 tsp of Sea Salt (to taste)

  • 1 tsp Acidophilus  or Nutritional Yeast

  • 1/4 Small Red Bell Pepper (optional)

Directions

  • Soak Cashews for 2-3 hours in water make sure they are fully covered

  • Add Cashews, Water, Lemon Juice, Chipotle Pepper, Smoke Paprika, Sea Salt and Acidophilus to Cuisinart, cut up red pepper and include as optional ingredient 

  • Blend mixture until creamy smooth adding more water if needed
